Spicy hot pineapple sauce with peanut and zest of kumquat juice is wonderful dip for vegetables, chips or meat. It is one of the best Asian recipes in South East Asia. Vietnamese people like  to prefer cooking this kind of food for serving their family and friends.

Ingredients

Tablespoon vegetable oil 1
Stalk green onion, minced 1
Cup chopped fresh pineapple or canned pineapple 1
Cup water ½
Tablespoon kumquat juice(approx 2 komquats) or lime juice 1
Tablespoons sugar or palm sugar 2
Teaspoon salt ½
Cup unsalted roasted peanut ½
Teaspoon Sambal Oelek pepper paste or to your taste(option) 1

Directions to make Pineapple and Peanut Sauce

  1. Heat up a small sauce-pan.
  2. When sauce-pan is hot, add oil and green onion, stirs, add pineapple, water, kumquat juice, sugar, and salt, stirs and simmering till sauce bubbling, removed sauce from heat and set a side to cool.
  3. In a blender, put peanut, pepper paste and prepared pineapple sauce together, blended well before serve.
